Rockin' Pasta Sauce


Too many people add too many things to their sauces. Master a simple sauce like this before you get too kooky! Feel free to add meat!



Ingredients

4 cloves Garlic
3/4 Onion, chopped
3 T GOOD Olive Oil...don't be a cheapy!
1 cup Chicken Broth
1 (28 oz) can whole Tomatoes
1 (6oz) can Tomato Paste (the ones with spices are good for this)
1/2 tsp Black Pepper (freshly cracked)
1 tsp Kosher Salt
2 tsp Red Pepper Flakes (less if you aren't big on spicy)
1 tsp Sugar
1 tsp dried Parsley
1/2 tsp dried Basil

Directions

1. Chop and smash the garlic into a paste.

2. Heat up a large saucepan with the olive oil in it over medium-high heat.

3. Add the onions & garlic to the pan and cook for 6-9 minutes or until the mixture is starting to brown.

4. Add the chicken broth to the pan and scrape the bottom. "Glaze" the pan. This gets all the good stuff into the mixture.

5. Add the tomatoes and crush them in the pan using your a potato masher. It adds to the texture of the sauce.

6. Add the tomato paste and all of the stuff except the parsley and basil.

7. Stir it up good!

8. Bring the sauce to a soft boil then turn the heat to low and cover the pan.

9. Let the sauce simmer for 1 to 1 1/2 hours, stirring occasionally.

10. Add the parsley and basil and simmer an addition 10 minutes.

11. Serve on your noodles...you didn't forget to make them did you???
